03 - 1/2 teaspoon baking soda
04 - 1 teaspoon ground cinnamon
05 - 1/2 teaspoon ground nutmeg
06 - 1/4 teaspoon ground allspice
07 - 1/2 teaspoon salt
→ Wet Ingredients
08 - 1 cup apple cider
09 - 1/2 cup whole milk
10 - 1/2 cup unsalted butter, melted
11 - 2/3 cup packed brown sugar
12 - 2 large eggs
13 - 1 teaspoon vanilla extract
→ Coating
14 - 1/4 cup unsalted butter, melted
15 - 1/2 cup granulated sugar
16 - 2 teaspoons ground cinnamon
# Steps:
01 - Preheat the oven to 350°F. Line a 12-cup muffin tin with paper liners or lightly grease it.
02 - Pour apple cider into a small saucepan and simmer over medium heat until reduced by half, approximately 1/2 cup remains. Remove from heat and allow to cool.
03 - In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
04 - In a large bowl, whisk the reduced apple cider, milk, melted butter, brown sugar, eggs, and vanilla extract until evenly combined.
05 - Gradually add the dry mixture to the wet mixture, stirring gently until just combined, taking care not to overmix.
06 - Divide the batter evenly among the muffin cups, filling each about three-quarters full.
07 - Bake for 18 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
08 - Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool further.
09 - Mix granulated sugar and cinnamon in a shallow bowl. Brush each warm muffin with melted butter, then roll in the cinnamon sugar mixture until coated.
10 - Serve muffins warm or at room temperature.
