# Ingredient List:

→ Noodles

01 - 2 packs instant ramen noodles (seasoning packets discarded)

→ Sauce & Dairy

02 - 2 large eggs
03 - 60 ml grated Parmesan cheese
04 - 60 ml heavy cream
05 - 1 tablespoon unsalted butter

→ Meats (optional)

06 - 3 slices bacon or pancetta, diced (omit for vegetarian)

→ Flavor & Seasoning

07 - 2 cloves garlic, minced
08 - 1/2 teaspoon freshly ground black pepper
09 - Salt, to taste
10 - 1 tablespoon chopped fresh parsley (optional, for garnish)

# Steps:

01 - Bring medium pot of water to a boil. Cook ramen noodles per package directions without seasoning. Drain, reserving 60 ml of cooking water. Set noodles aside.
02 - Whisk eggs, Parmesan cheese, heavy cream, and black pepper in a bowl until smooth and uniform.
03 - In large skillet over medium heat, cook diced bacon or pancetta until crispy. Remove and set aside, leaving 1 tablespoon fat in skillet. If omitting meat, add butter instead.
04 - Add butter and minced garlic to skillet. Sauté for 30 seconds until fragrant.
05 - Add cooked noodles to skillet and toss to coat evenly with garlic butter mixture.
06 - Remove skillet from heat. Immediately pour egg and cheese mixture over noodles, tossing rapidly to create a creamy sauce. Add reserved noodle water gradually to loosen sauce if necessary.
07 - Stir crispy bacon into noodles if used. Season with salt to taste.
08 - Plate immediately and garnish with extra Parmesan cheese and fresh parsley as desired.
