Creamy Cajun Chicken Pasta Lite (Printable)

# Steps:

01 - Cook penne according to package instructions until al dente. Drain and set aside, reserving 1/4 cup pasta water.
02 - In a medium bowl, combine chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper. Toss until evenly coated.
03 - Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté for 4 to 5 minutes until golden and cooked through. Transfer to a plate.
04 - In the same skillet, add sliced bell peppers and red onion. Sauté for 4 to 5 minutes until softened. Add minced garlic and cook for 1 minute more.
05 - Reduce heat to medium. Return chicken to the skillet. Add cream cheese and milk, stirring until smooth and creamy. If sauce is too thick, add reserved pasta water one tablespoon at a time.
06 - Stir in Parmesan cheese, lemon zest, and lemon juice. Add cooked penne and toss to coat evenly. Season to taste and garnish with chopped parsley before serving.
