Sweet peaches paired with miso caramel sauce and a crunchy oat topping for a comforting dessert.

# Ingredient List:

→ Peaches

01 - 6 cups ripe peaches, peeled and sliced (about 6–7 medium peaches)
02 - 2 tbsp granulated sugar
03 - 1 tbsp lemon juice
04 - 2 tbsp cornstarch

→ Miso Caramel Sauce

05 - 1/2 cup granulated sugar
06 - 2 tbsp water
07 - 1/2 cup heavy cream
08 - 1 tbsp unsalted butter
09 - 1 tbsp white miso paste
10 - 1/2 tsp vanilla extract

→ Crisp Topping

11 - 1 cup old-fashioned rolled oats
12 - 1/2 cup all-purpose flour
13 - 1/2 cup packed light brown sugar
14 - 1/2 tsp ground cinnamon
15 - 1/4 tsp fine sea salt
16 - 1/2 cup unsalted butter, cold and cubed

# Steps:

01 - Preheat the oven to 350°F (180°C) and grease a 2-quart baking dish.
02 - In a large bowl, gently toss the sliced peaches with granulated sugar, lemon juice, and cornstarch until evenly coated. Transfer the mixture to the prepared baking dish.
03 - Combine granulated sugar and water in a small saucepan over medium heat. Simmer without stirring until it turns a light amber color, about 5 to 7 minutes. Remove from heat and carefully whisk in heavy cream; the mixture will bubble. Stir in butter until melted, then whisk in white miso paste and vanilla extract until smooth. Allow to cool slightly.
04 - Drizzle the miso caramel sauce evenly over the peach mixture in the baking dish.
05 - In a mixing bowl, combine oats, all-purpose flour, light brown sugar, cinnamon, and sea salt. Add the cold cubed butter and rub with fingertips or use a pastry cutter until the mixture resembles coarse crumbs.
06 - Sprinkle the oat topping evenly over the peaches and caramel sauce. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly. Let rest for 10 minutes before serving.

# Expert Advice:

01 -
  • The miso caramel gives this classic comfort a savory edge you won’t see coming.
  • Buttery oat topping crisps up so perfectly it practically begs for a scoop of ice cream.
02 -
  • If you skimp on cooling the caramel before adding it, your crisp will turn messy and lose that textured layer.
  • Stirring the caramel instead of swirling? I learned that crystallizes the sugar—so swirl, don’t stir!
03 -
  • Let the caramel sit off the heat before adding the cream—patience saves the sauce and your nerves.
  • Chill the butter again if your kitchen is warm, so the topping stays extra crisp.
