09 - 4 oz shredded kunafa/kataifi pastry, thawed if frozen
10 - 4 tbsp unsalted butter, melted
11 - 1/4 cup shelled pistachios, roughly chopped
12 - 2 tbsp granulated sugar
→ Sugar Syrup
13 - 1/3 cup water
14 - 1/2 cup granulated sugar
15 - 1 tsp lemon juice
16 - 1/2 tsp rose water or orange blossom water (optional)
# Steps:
01 - Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
02 - Combine shredded kunafa pastry with melted butter in a bowl until thoroughly coated. Add chopped pistachios and sugar, toss to distribute evenly, and set aside.
03 - In a small saucepan, bring water and sugar to a boil. Add lemon juice, reduce heat, and simmer for 4 to 5 minutes. Remove from heat and stir in rose or orange blossom water if using. Let cool completely.
04 - Melt dark chocolate and butter together using a double boiler or microwave in 30-second intervals, stirring until smooth. Whisk in sugar, then add eggs one at a time, followed by vanilla extract. Fold in flour, cocoa powder, and salt until just combined.
05 - Pour brownie batter into the prepared pan and spread evenly. Evenly distribute the kunafa-pistachio mixture over the top, pressing gently to adhere. Bake for 30 to 35 minutes, until set and the topping is golden brown.
06 - Remove from oven and immediately drizzle with cooled sugar syrup. Allow to cool completely in the pan before cutting into squares.
