# Steps:

01 - Boil salted water and cook pasta per package directions until al dente. Reserve 1/2 cup pasta water, drain pasta, and set aside.
02 - In a large skillet over medium-high heat, melt 1 tablespoon butter. Season shrimp with salt and pepper, then cook 2–3 minutes per side until pink and opaque. Transfer shrimp to a plate.
03 - Add remaining butter to skillet. Sauté onion 2–3 minutes until translucent. Add garlic and cook 1 minute until fragrant.
04 - Stir in sun-dried tomatoes and cook 1 minute. Pour in chicken broth and bring to simmer, scraping browned bits from skillet.
05 - Lower heat to medium-low. Stir in heavy cream, Parmesan, Italian herbs, and red pepper flakes. Simmer 2–3 minutes until sauce thickens slightly.
06 - Add baby spinach and cook until wilted, stirring frequently.
07 - Return shrimp and drained pasta to skillet. Toss to coat in sauce, adding reserved pasta water gradually to adjust consistency.
08 - Adjust seasoning with salt and pepper to taste. Serve immediately, garnished with chopped parsley and extra Parmesan.
