# Steps:

01 - Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
02 - Wash the delicata squash, trim the ends, and slice into ½-inch rings. Remove seeds from each ring using a spoon.
03 - Toss the squash rings with olive oil, maple syrup, sea salt, black pepper, and cinnamon in a large bowl until fully coated.
04 - Arrange the rings in a single layer on the prepared baking sheet. Bake for 20 to 25 minutes, turning halfway through, until golden and tender.
05 - Transfer to a serving platter and immediately sprinkle with chopped pistachios and optional parsley. Serve warm.
