03 - 2 bell peppers (red, yellow, or orange), sliced into strips

# Steps:
01 - Set the oven to 425°F to prepare for roasting.
02 - In a large rimmed baking sheet, combine halved potatoes, bell peppers, and red onion. Add olive oil, minced garlic, oregano, thyme, smoked paprika, salt, pepper, and red pepper flakes if using; toss thoroughly to coat evenly.
03 - Evenly spread the seasoned vegetables on the baking sheet and nestle the sausages amongst them.
04 - Place the baking sheet in the oven and roast for 35 minutes, flipping the sausages and stirring the vegetables halfway through, until the potatoes are golden and tender, and sausages reach an internal temperature of 160°F.
05 - Remove from oven and allow to rest for 5 minutes. Garnish with fresh parsley and serve with lemon wedges if desired.
