Instructions

Preheat & Prep:
Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin or line with mini paper liners.
Mix Dry Ingredients:
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
Mix Wet Ingredients:
In a separate bowl, whisk together melted butter, buttermilk, eggs, bourbon, and vanilla until smooth.
Combine Batter:
Add wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
Add Apples:
Fold in the diced apple.
Fill Muffin Tin:
